Snackalami ‘Fennel’

Pork and fennel is a traditional Italian pairing in salami making, as both are complementary in their mild sweetness. During the Middle Ages, as the cost of pepper skyrocketed, Tuscans began experimenting with locally sourced herbs and spices. Fennel, known as Finocchiona, became a staple ingredient and has been cherished ever since.

Made from high welfare outdoor-reared British pork from our farmers in Kent, our Wild Fennel Snackalami are the perfect gourmet snack: high protein, gluten-free, low-carb and keto-friendly. Make it part of a charcuterie board or enjoy as an on-the-go saucisson.

 

Flavour

Taste Salty pork flavour with sweet notes and low acidity, perfectly contrasted by a lingering mild aniseed finish.
Pairing Pair with an acidic, bold red wine or a negroni.
Aroma Faint pleasant cured pork smell with a hint of liquorice from the fennel seeds.
Texture Slightly nobbled with a bouncy texture for a satisfying chew.
Appearance Approx 16-18cm long and 1 cm diameter – straight or slightly curved – dappled with fat and specs of fennel.
