DESCRIPTION

A bold, hard Italian cheese, and that's the whole list. Each wheel takes 400 litres of fresh milk, which is a fair bit of effort for something you'll finish in one sitting.

The truffle earthiness rewards a bit of thought. A sweet dessert wine draws both flavours out and lingers nicely, while a stout or porter meets the earthiness head on. Either way, you're in good company.

Matured for months, crumbled, then baked in a hot oven until golden and crisp. Big on crunch, bigger on full-bodied flavour.

With pure cheese as the main ingredient, you'll enjoy zero carbs. The only health warning is that it's hard to stop at a handful.

The earthy, savoury depth of the black truffle wants a rich, malty stout or porter behind it. The roasted, chocolatey weight of the beer stands up to the truffle rather than getting lost, and the whole thing turns properly indulgent.

Each batch begins with whole wheels of Quattrocento, a mature Italian hard cheese aged in the same tradition that gave the world Parmesan, slowly matured until it develops the deep, savoury character that makes it worth baking into something this crunchy. We simply break the wheels down by hand, season the pieces and let a rather specialised oven do the rest, turning a serious cheese into a seriously good snack.

Our Classic Snacking Cheese took home two gold stars at the 2024 Great Taste Awards, with judges reportedly blown away by the flavour, while the Caramelised Onion picked up a gold star of its own that same year and the Rosemary followed with one in 2025.
